Method

Preheat oven to 180°C (160°C fan-forced).

Line a 12-hole muffin pan with paper patty cases. In a bowl, using an electric mixer, cream butter, mixed spice and sugar together until light and fluffy. Beat in the vanilla extract. Add eggs, one at a time, beating well after each addition.

Fold in flour alternately with milk, beginning and ending with flour. Fold in Sunbeam sultanas.

Spoon mixture into paper cases until two-thirds full.

Bake for 25-30 minutes or until cooked when tested with a skewer.

Cool in pan for 5 minutes, before turning onto a wire rack to cool completely.

To make the icing: beat cream cheese with icing mixture. Slowly fold melted and cooled chocolate.

Ice the cupcakes and decorate with mini gingerbread houses.

Ingredients

160g Caster Sugar

125 grams butter softened

3 Eggs

1 teaspoons Mixed spice

1 teaspoon cinnamon

100g Sunbeam Sultanas

200g Self Raising flour

65g Milk

Icing

250 gram cream cheese

1/2 cup icing mixture

100 gram white chocolate

Butter Biscuit Wreaths

  1. Preheat oven to 160°C and line with baking trays. Set aside 1/4 cup raisins for decorating. Roughly chop remaining raisins.

  2. Beat butter and sugar with electric mixer until light and creamy. Sift in flour and mixed spice and add chopped raisins. Mix until combined. Divide dough in half and form into two disks. Wrap and refrigerate 30 minutes or until firm.

  3. Roll dough between sheets of baking paper to 0.5cm thick. Cut 8cm rounds with cookie cutter. Transfer to lined baking trays and cut 3cm circles from middle of rounds to form rings. Reroll dough as necessary and refrigerate if too soft. Bake 15-20 minutes until lightly coloured. Cool on trays.

  4. To decorate, working with one biscuit at a time, drizzle white chocolate over the top and decorate with raisins, almonds and other decorations.

Choc Sultana Hot Cross Bun

Preheat oven to 200°C

  1. Sieve plain flour and mixed spice. Rub butter into the flour until well incorporated and add dry yeast, castor sugar, sultanas, currants and chocolate dots. Add the milk and eggs and mix well. Place on a floured surface and gently knead dough for ten minutes until smooth and velvety. Cover and leave to rise for one hour or until mixture has doubled in size.
  2. Gently knead for 2 minutes then divide into 12. Gently knead into balls and shape into buns. Arrange in a greased baking tin and leave to rise again for 15 minutes.
  3. Combine ingredients for flour paste crosses and place in a piping bag. Pipe crosses onto buns.
  4. Bake for 10 minutes; reduce heat to 170°C and bake for a further 20 minutes.
  5. Turn onto a wire rack, serve hot with butter, if desired

Muesli Bar Slice

Preheat oven to 180°C. Grease and line a 28cm x 18cm x 3cm tin

  1. In a large bowl mix together the oats, oat bran, bran, sunflower kernels, flour, apricots and sultanas.
  2. Melt the butter, honey and brown sugar in the microwave for 1 minute and add to the dry ingredients. Stir in the egg and milk until well combined.
  3. Press into greased and lined tin and bake for 15 minutes. Cut into slices when cooled.

Easter Chickens

  1. Combine mixed fruit, dates, seeds mix, hazelnuts, coconut, coconut oil and vanilla in the bowl of a food processor. Blend well until a thick paste is formed. Roll tablespoonfuls of mixture into balls and refrigerate.
  2. Place chocolate into a heatproof bowl and place over a saucepan of gently simmering water. Mix until melted and smooth. Remove from heat.
  3. Combine coconut and food colouring, tossing until well distributed.
  4. Using a fork, pierce balls and dip into melted chocolate. Sprinkle with coloured coconut and set aside on a tray. Decorate with almonds, eyes and beaks. Refrigerate until required.

Easter Fruit Loaf

Preheat oven to 180°C

Dough:

  1. Sift self raising flour, bi-carb soda, mixed spice and castor sugar into a large bowl. Pour in buttermilk and mix with a butter knife to combine. Tip onto a floured surface and knead for 1 minute. Roll out to a 40cm x 30cm rectangle.
  2. Cream butter, sugar and vanilla essence until light and fluffy. Thinly spread creamed butter mix over dough and sprinkle evenly with almond meal. Combine all the fruit in a small bowl and spread on top of the almond meal.
  3. Roll into a loaf, place on a greased paper lined oven tray and set aside for 15 minutes to allow dough to rise.
  4. Bake for 45 minutes. Remove from oven and cool on a wire rack. When cool, ice and sprinkle with toasted flaked almonds.

Icing:

  1. Combine sifted icing sugar with boiling water.

Christmas Pudding

Greese 2 small or 1 large basin.

Mix all the dry ingredients together. Fill the mixture into the basins, or if preferred a well seasoned pudding cloth. Place 2 thicknesses of foil over the basins and tie securly.

Boil steadily for 6 hours for the lrge pudding and 4 hours for the small. On the day pudding is to be served, boil for 1 hour.
