Method
Preheat oven to 180Β°C (160Β°C fan-forced).
Line a 12-hole muffin pan with paper patty cases. In a bowl, using an electric mixer, cream butter, mixed spice and sugar together until light and fluffy. Beat in the vanilla extract. Add eggs, one at a time, beating well after each addition.
Fold in flour alternately with milk, beginning and ending with flour. Fold in Sunbeam sultanas.
Spoon mixture into paper cases until two-thirds full.
Bake for 25-30 minutes or until cooked when tested with a skewer.
Cool in pan for 5 minutes, before turning onto a wire rack to cool completely.
To make the icing: beat cream cheese with icing mixture. Slowly fold melted and cooled chocolate.
Ice the cupcakes and decorate with mini gingerbread houses.

160g Caster Sugar
125 grams butter softened
3 Eggs
1 teaspoons Mixed spice
1 teaspoon cinnamon
100g Sunbeam Sultanas
200g Self Raising flour
65g Milk
Icing
250 gram cream cheese
1/2 cup icing mixture
100 gram white chocolate

Line 6 x 180ml dariole moulds (or 6 x 180ml capacity small dishes) with plastic wrap.*
Place icecream into a large bowl and allow to stand at room temperature for 10 mins, or until soft (do not allow to completely melt).Β Β Add fruit, nuts and sherry and use a spatula to mix well.
Spoon the mixture evenly between the prepared moulds and freeze overnight or until firm.
Slice the madeira cake horizontally into three big slices, about 2cm thick.Β Β Use a cookie cutter (just bigger than the bases of the icecream moulds) to cut 6 rounds from the cake slices.Β
To make the meringue, combine egg whites and sugar in the bowl of a stand mixer fitted with a whisk attachment.Β Β Whisk until stiff peaks form.
One at a time, carefully remove an icecream from the mould and place on top of a cake round.Β Β Working quickly, smooth meringue around the cake and icecream to completely cover then blowtorch until golden.Β Β Serve and repeat with remaining prepared icecreams.
Toasted Almond & Blueberry Salad
- Toast almonds in a pan on medium heat then set aside.
- Wash berries and slice strawberries into halves.
- Crumble blue cheese and combine salad ingredients together.
- Combine dressing ingredients and blend until smooth, pour over salad when serving.
Festive Rumballs
- Place biscuits, walnuts and sultanas in a food processor, pulsing until fine crumbs have formed. Add coconut, condensed milk and cinnamon. Continue pulsing until mixture has come together. Remove to a bowl and refrigerate for at least 15 minutes.
- Roll teaspoons of chilled mixture into balls whilst enclosing half a cherry or walnut inside. Toss in extra coconut or finely chopped walnuts. Refrigerate until required.
Chocolate & Hazelnut Meringue
- Preheat oven to 140Β°C (120Β°C fan-forced). Trace 3 x 15cm diameter circles on baking paper and place onto oven trays.
- Set aside half of the hazelnuts and finely chop remaining half.
- Place egg whites in the bowl of an electric mixer and beat until firm peaks have formed. Gradually add sugar a little at a time until all has been incorporated and mixture is thick and glossy. Remove bowl from machine and gently fold in the chopped hazelnuts and cocoa with a large metal spoon, until just combined.
- Divide mixture between prepared oven trays, spreading it within each of the circles. Bake for 1 hour, then turn the oven off and allow meringues to cool in the oven.
- For the cream, whip the cream and sugar together until firm peaks form. Roughly squash half of the raspberries with a fork and fold into the cream.
- For assembly, place one meringue disc onto a serving plate, top with β of the cream. Repeat process using all meringues and finishing with cream on top. Decorate with remaining raspberries and reserved hazelnuts. Allow to sit for at least 30 minutes prior to serving.
Gingerbread Bundt Cake with Maple Fruit Glaze
Preheat oven to 180β.Β
Add the Sunbeam Mixed Fruit and cover with maple syrup. Allow to sit to soak while making the cake.Β Β
Prep your bundt tin by rubbing all over with coconut oil and dusting with a little caster sugar to get into all the crevices.Β Β Β
In a large bowl, add the flour, baking powder, soda, salt and spices. Mix together to combine.Β Β
In a stand mixer, add the butter and coconut sugar. Cream together. Add in the eggs and coconut treacle, then mix until smooth. Add in the milk and mix again until combined.Β Β
Add in the dry mix ΒΌ cup at a time, until you form a smooth batter.Β Β
Β Pour the cake batter into the prepared bundt tin, then bake for 40-45 minutes until cooked through (piece the middle with a skewer, and if it comes out clean itβs done!). Remove from the oven and allow to cool in the tin for 15 minutes and carefully flip and allow the cake to pop out.Β Β
To make the icing:Β beat together the cream cheese and butter until smooth and creamy. Add sugar and milk and beat until desired consistency is reached. The icing should be thin enough that it can run down the cake. Add a little more milk as needed to reach this consistency. Add the salt, cinnamon and vanilla. Blend until well combined.Β Β
Β Frost the Gingerbread Bundt Cake and spoon over the Fruit Glaze and toasted walnuts.Β Β Β
Fruit Nut Fudge Brownie
- Preheat oven to 180Β°C. Grease and line base and sides of a 27cm x17cm slice pan with baking paper, extending paper over sides.
- Combine fruit and rum or juice in saucepan and bring just to the boil. Set aside to cool, stirring occasionally. Set aside 1/4 cup of the fruit mixture for decorating the top.
- Heat butter and chocolate in saucepan over low heat and stir until melted and combined. Set aside to cool 10 minutes.
- Whisk sugar and eggs together in large bowl, then whisk in cooled chocolate mixture and remaining soaked fruit. Sift flour, cocoa and baking powder into the bowl and add half of the hazelnuts (saving some for the top). Stir until combined. Pour into prepared pan and scatter with reserved fruit and nuts.
- Bake for 40-45 minutes or until tested with a skewer. Some crumbs will cling to the skewer. Allow to cool in the pan for 30 minutes before removing. Cut into 18 pieces and serve warm and gooey or cool and fudgy.
