Easter Blondies

Method
Preheat the oven to 190 degrees Celsius and butter or line with parchment paper a 20cm x 20cm baking tin.
Melt the butter and white chocolate in a bowl over a pot of water and take off to cool once combined and fully melted.
In another bowl, mix the muscovado sugar, caster sugar and eggs together until thick and glossy. Approximately 2 minutes.
Once the butter and white chocolate mixture is cooled, mix in 1/3 to the sugar and eggs, and then fold in the rest.
Add in your flour, baking powder, vanilla, almonds and macadamias and mix until just combined.
Pour batter into your lines baking tin and for 35-45 minutes. The centre should still have a little wobble and a tooth pick should come out a little fudgy.
Straight from the oven, press your speckled eggs into the top of your blondie and let cool on a wire rack.
Ingredients
225gm Unsalted Butter diced
100gm white chocolate chips
250gm Muscovado Sugar
325gm plain flour
100gm Sunbeam Macadamias
100gm Sunbeam Blanched Almonds
150gm Caster sugar
1tsp baking powder
3 eggs
1 teaspoon vanilla paste
140gm Cadbury mini speckled eggs

Baked Brie with Fruit & Nuts
Soak dried fruit in maple syrup & hot water to coat for 15β20 mins until plump and sticky. The longer the soak the plumper the fruit gets.
Score the top of the brie (light cross-hatch), place on a baking dish or lined tray. Bake at 180Β°C for 10 mins, until soft and gooey.
Top with the soaked fruit mixture and a little extra maple syrup.
Serve warm with crusty bread & crackers
Easter Chocolate Bark
Grease and line a standard baking tray. Set aside.
Place each chocolate flavour in separate bowls. Microwave each bowl in 20 second bursts, stirring in between, until melted.
Divide the white chocolate into 3 separate bowls. Add a few drops of pink colouring to one and stir.
Add a few drops of purple colouring to the second bowl and stir.
Pour the milk chocolate into prepared tray, tilting the tray until the whole base is covered.
Spoon each of the coloured and plain white chocolate onto different spots on the chocolate. Sprinkle with Sunbeam mixed fruit.
Using a skewer, make swirls in the chocolate to create a marble effect. Decorate with chosen sprinkles and cool to set.
Cut or break up chocolate to serve. Great as a gift too!
Walnut Sultana Zucchini Carrot Cake
Preheat oven to 180ΒΊC (160ΒΊC fan).Β Β Grease and line base and sides of two x 22.5cm (9β) round baking tins.Β
In the bowl of a stand mixer fitted with beater attachment, combine zucchini, carrot, flour, sugar, 50g of walnuts, sultanas and spices.Β Β Mix on low until just combined.
Whisk together oil and eggs then add to the zucchini mixture and beat on low until just combined.Β Β Divide the mixture evenly between the prepared tins, smoothing the surfaces.Β Β Bake for 1 hour to 1 hour and 10 mins or until a skewer inserted into the centre of the cakes comes out clean.Β Β Allow the cakes to cool in tins for an hour, then invert onto a baking rack to cool completely.
To make the icing, combine butter and cream cheese in the bowl of a stand mixer fitted with whisk attachment.Β Β Whisk until smooth.Β Β Add sifted icing sugar and whisk until smooth and fluffy.
To decorate, spread half the icing on top of one cake.Β Β Arrange the second cake on top and spread with remaining icing.Β Β Sprinkle with chopped walnuts to decorate.
Mini Choc Raisin & Hazelnut Puddings
- Preheat oven to 170ΒΊC. Place raisins, sultanas and rum in a bowl and set to one side.
- Cream butter and brown sugar, until light and fluffy.
- Beat in eggs one at a time beating well after each addition.
- Sift flours, mixed spice and cinnamon.
- Add breadcrumbs, finely chopped hazelnuts, chocolate, buttermilk, rum soaked fruit and butter mixture and mix well to combine.
- Prepare 8 pudding basins (200ml capacity): spray pudding basins with oil and line the bottom with baking paper.
- Divide evenly between prepared pudding basins.
Steaming Instructions
Place basins into a baking dish, and pour in enough boiling water to Β½ fill the baking dish, cover with foil. Steam bake for 1 hour. Remove foil and bake for a further 20 minutes.
Microwave Instructions
Cook in microwave on defrost setting (300W) for 15 minutes, check if a skewer inserted into pudding comes out clean. If not cooked, microwave at 5 minute intervals, until skewer comes out clean. Stand for 10 minutes before turning out. Repeat with remaining mixture. (Note: Do not use foil in microwave).
Apricot Balls
- Place apricots, sultanas and water in a small saucepan. Bring to a gentle boil, then simmer for 2-3 minutes.
- Place cooled fruit in a food processor and pulse until smooth. Add oats and coconut. Remove to a bowl and roll teaspoonsful into balls and then roll in sesame seeds to coat. Refrigerate until required.
Notes:
Balls can also be rolled in coconut, chopped pepitas or chopped nuts.
Beef Crostini Sunmuscat Relish
This appetiser is nice way to begin a Christmas meal.
For the relish. Heat remaining 2 teaspoons oil in a pan over medium-low heat. Add shallots, and cook until soft, about 4 minutes. Add Sunmuscats, port, vinegar, chilly, and thyme sprig. Raise heat to medium-high, and simmer until thickened, about 8 minutes. Let cool slightly. stir in chopped thyme, celery, salt, and pepper.
To serve, combine mayonnaise and mustard, and spread about 2 teaspoons on each slice of baguette. Top with a slice of beef, season with salt, and top with 1 teaspoon sunmuscat-port relish. Garnish with micro herbs.
