Christmas Plum Pudding

Christmas Plum Pudding

  • Cooking time: 6 ½ hours
  • Makes: 8 serves

Ingredients

  • 3 cups Sunbeam Mixed Fruit
  • 2/3 cup Sunbeam Pitted Prunes, chopped
  • ½ cup walnuts, chopped
  • juice and rind of 1 orange
  • 1/3 cup brandy
  • ¼ cup golden syrup
  • 2 eggs, lightly beaten
  • 2/3 cup thickened cream
  • 2/3 cup brown sugar
  • 1 cup plain flour
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon bicarbonate of soda

Method

1.Place Sunbeam Mixed Fruit, Sunbeam Prunes, walnuts, orange juice and rind, brandy and golden syrup in a large bowl and stir to mix well.
2.Mix eggs, cream and sugar together and add to fruit mixture combining well.
3.Sift flour, cinnamon, nutmeg and bicarbonate of soda together and fold into fruit mixture.
4.Place pudding mixture into a very well greased and lined 5 cup pudding basin. Place foil over top of basin, securing with a string and then cover with lid.
5.Place pudding in a large saucepan of boiling water making sure water comes halfway up the side of the basin. Boil for 5 hours, checking water volume frequently. Re-boil a further 1 ½ hours to serve.
