| 1. | Preheat oven to 170*C |
| 2. | Lightly oil 6-8 ramekins/cups. Line base with baking paper |
| 3. | Combine fruit, nuts, brandy, orange juice & rind in a bowl & mix well. |
| 4. | In another bowl whisk the eggs, cream & sugar together. |
| 5. | Sift flour, spices & bicarb soda into the fruit & stir in the egg mixture. Mix well. |
| 6. | Pour into the prepared ramekins/cups & cover top with baking paper and a layer of foil. |
| 7. | Put Ramekins/cups in a deep ovenproof dish and then pour in enough boiling water to come half way up the sides. |
| 8. | Bake for approximately 30 minutes, or until done. |
| 9. | Turn out & leave to cool, then wrap in a double thickness of foil & refrigerate until needed. |
