Easy Christmas Mini Puds

Easy Christmas Mini Puds

  • Preparation time: 15 minutes
  • Cooking time: 30 minutes
  • Makes: 6-8 serves
  • Tip: To reheat, cover with plastic wrap, microwave for 2 minutes then turn upside down & heat for another 1-2 minutes. For single slices heat for about 40 seconds each.

Ingredients

  • 3 cups (450g) Sunbeam Mixed Fruit
  • 2/3 cups (100g) Sunbeam Pitted Prunes, chopped
  • ½ cup (60g) Sunbeam Californian Walnuts, chopped
  • 1/3 cup brandy
  • Juice & grated rind of 1 orange
  • 2 eggs
  • 2/3 cup thickened cream
  • 1 cup brown sugar
  • 1 cup plain flour
  • 1 ½ tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp bicarbonate of soda

Method

1.Preheat oven to 170*C
2.Lightly oil 6-8 ramekins/cups. Line base with baking paper
3.Combine fruit, nuts, brandy, orange juice & rind in a bowl & mix well.
4.In another bowl whisk the eggs, cream & sugar together.
5.Sift flour, spices & bicarb soda into the fruit & stir in the egg mixture. Mix well.
6.Pour into the prepared ramekins/cups & cover top with baking paper and a layer of foil.
7.Put Ramekins/cups in a deep ovenproof dish and then pour in enough boiling water to come half way up the sides.
8.Bake for approximately 30 minutes, or until done.
9.Turn out & leave to cool, then wrap in a double thickness of foil & refrigerate until needed.
