Easter Bunny's Favourite Carrot Cake

Makes: 12 slices

What You’ll Need

1 cup plain flour
1 cup self raising flour
½ tsp bicarbonate of soda
2 tsp cinnamon
½ tsp nutmeg
2 cups carrot, grated
½ cup Sunbeam Australian Walnuts
½ cup Sunbeam Sultanas
1 cup brown sugar firmly packed
1 cup oil
3 eggs

Cream Cheese Frosting
250g cream cheese
1 ½ cups icing sugar
1 tsp vanilla essence
¼ cup Sunbeam Walnuts



  1. Preheat oven to 160⁰C. Grease a 20cm round cake tin and line base and sides with baking paper.
  2. Sift flours, spices and bicarbonate of soda into a bowl. Stir in carrot, walnuts, sultanas and brown sugar.
  3. Whisk together oil and eggs in a jug and pour into dry ingredients. Pour mixture into prepared pan and bake for 55 minutes or until skewer comes out clean.
  4. Beat cream cheese, icing sugar and vanilla essence in a bowl until smooth. Spread over cooled cake, top with walnuts.
