Macadamia Crusted Barramundi Fillet

Cooking Time: 15 minutes

Serves: 4

 

What You’ll Need

1 cup Sunbeam Macadamia Meal

2 tbsp chives, chopped

2 tbsp parsley, chopped

1 lemon, zest only

20g butter, melted

4 x 160g barramundi fillets

Salt and Pepper

 

Method

Preheat oven to 200°C

  1. Line a baking tray with baking paper.
  2. Combine macadamia meal, chives, parsley, lemon zest and butter and season with salt and pepper.
  3. Divide the mixture into 4 and firmly press a portion onto top of each fish and place on baking tray.
  4. Bake for 10-15 minutes and serve with fresh seasonal vegetables.

TIP: Macadamia Crusted Chicken
Same recipe as above except 2 chicken breast fillets (halved length ways). Bake in 180°C oven.
