Serves 4

Method

Preheat the oven to 170Β°C. Line a large baking tray with baking paper.

  1. Combine oats, sugar, coconut, cinnamon, almonds, walnuts, oil and honey in a bowl. Mix with hands compacting together. Bake in the oven for 5 minutes and then stir and return for another 5 minutes.
  2. Stir in currants and sultanas and bake for a further 5-8 minutes to ensure the granola is evenly golden brown.
  3. Allow to cool completely before serving with milk or a good dollop of yoghurt.

Ingredients

2 cups rolled oats

2 tbsp brown sugar

2 tbsp desiccated coconut

1/2 tsp cinnamon

1/2 cup Sunbeam Flaked Almonds

1/4 cup Sunbeam Walnuts

3 tbsp sunflower oil

3 tbsp honey

1/2 cup Sunbeam Currants

1/2 cup Sunbeam Sultanas

Chocolate Fruit Truffles

  1. Add chocolate to a food processor and blitz until very finely chopped.
  2. Transfer chocolate to a bowl, pour over the hot thickened cream, add butter, currants and salt and stir to combine. Refrigerate for 3-4 hours until firm but still able to be scooped with a spoon.
  3. To make truffles, scoop 1 heaped tbsp of the mixture and use clean hands to roll into a rough ball. Repeat with remaining mixture (you should make about 24)
  4. Arrange crushed nuts, desiccated coconut and cacao powder in separate bowls. Roll each of the truffles into different coatings to decorate.*to make coloured coconut we combined desiccated coconut with a few drops of food colouring

Panforte

  1. Pre-heat oven to 180Β°C (160Β°C fan-forced). Line the base and sides of a 20cm round cake pan.
  2. Place sugar, honey and chocolate in a large saucepan and gently heat until chocolate is melted. Stir in the raisins, figs, cherries, cranberries and nuts. Mix well.
  3. Add flour, cocoa and spices to mixture and working quickly mix it together until all combined. You may need to wear a thick rubber glove. Press mixture into prepared pan and bake for 13-15 minutes. Set aside to cool before removing from pan to cool completely.

Sunbeam Spiced Christmas Cake

In a large bowl, combine mixed fruit, cherries, nuts, apple, golden syrup and liquor.Β Β Mix well, cover and allow to stand overnight (or up to 24 hours for amazing flavour).

Preheat oven to 150ΒΊC (130ΒΊC fan forced).Β Β Very generously grease the bundt tin, ensuring butter is in all creases.Β 

Add sugar and butter to the bowl of a stand mixer fitted with a beater attachment.Β Β Beat until fluffy and pale.Β Β With the motor running, add eggs one at a time, beating until incorporated before adding the next.Β 

Add flour and spices, beat on low until just combined.Β Β Add orange zest and soaked fruit mixture and beat until just combined.Β 

In a small bowl mix together orange juice and bicarbonate of soda, add to the cake batter and beat until just incorporated.

Spoon batter into the prepared bundt tin, using a spatula to press mixture into any crevices and flatten the surface.

Bake for 2 ΒΌ to 2 Β½ hours or until the cake springs back when gently pressed in the centre.Β Β Allow cake to cool in the tin for an hour then invert onto a baking rack to remove and allow to cool completely.

Rocky Road

Grease and line the base and sides of a 20cm square baking tin.

Mix together raisins, cherries, marshmallows and pistachios.Β Β Pour 1 cup of the mixture into the base of the prepared tin.

Combine chocolate and butter in a heatproof bowl, microwave for 30 seconds, stir then microwave in 10 second bursts until melted.Β Β Allow to cool for about 5 mins before adding the remaining fruit and nut mixture.Β Β Toss to coat then pour into the prepared tin, gently flattening the surface.Β Β Refrigerate until firm (about 2 hours).

Remove from tin and slice into 4 long rows.Β Β Wrap in cellophane for Christmas gifting.

Chocolate Easter Nests

Pre-heat oven to 180Β°C (160Β°C). Place almonds on a baking tray and cook for 8 minutes or until golden. Set aside to cool.

Line a tray with baking paper which will fit into the refrigerator. Combine the almonds and sultanas in a bowl.

Place the different chocolates into 3 separate heat proof bowls. Place over a saucepan of gently simmering water and mix until melted. Add β…“ of the almond mixture to each bowl of chocolate and mix well.

Place spoonfuls of mixture onto lined trays and shape into a nest, using the back of the spoon to make an indent in the centre. Refrigerate for approx. 1 hour until set. Decorate with small easter eggs.
