Method

Preheat the oven to 170Β°C. Line a large baking tray with baking paper.

  1. Combine oats, sugar, coconut, cinnamon, almonds, walnuts, oil and honey in a bowl. Mix with hands compacting together. Bake in the oven for 5 minutes and then stir and return for another 5 minutes.
  2. Stir in currants and sultanas and bake for a further 5-8 minutes to ensure the granola is evenly golden brown.
  3. Allow to cool completely before serving with milk or a good dollop of yoghurt.

Ingredients

2 cups rolled oats

2 tbsp brown sugar

2 tbsp desiccated coconut

1/2 tsp cinnamon

1/2 cup Sunbeam Flaked Almonds

1/4 cup Sunbeam Walnuts

3 tbsp sunflower oil

3 tbsp honey

1/2 cup Sunbeam Currants

1/2 cup Sunbeam Sultanas

Granola Bar

Preheat oven to 160Β°C.

  1. Grease and line an 18cm x 28cm slice pan with baking paper.
  2. Combine all dry ingredients in a bowl.
  3. Mix melted butter and honey together and stir into dry ingredients
  4. Press mixture firmly into tin using the back of a spoon. Bake for 20 minutes or until golden. Allow to cool in the tin before slicing into bars.

Sunbeam Raisin Toast

Gather the ingredients.

Yeast needs warm water to activate, not hot. Just warm. Sprinkle your packet of yeast over the top of the warm water. You don’t even need to stir it in.

Once you get the yeast on the water, add about a teaspoon of granulated sugar.

After a couple of minutes it will start to look cloudy and have a little bit of foam on top.

Once you see the foam, & bubbling you’re ready to use your yeast in this recipe.

In a large bowl, combine the Sunbeam raisins, warm milk, butter, sugar, and salt; stir to dissolve the sugar. Let the mixture cool to lukewarm.

Stir 1 1/2 cups of the flour into the milk mixture and beat until smooth.

Add the yeast mixture and the beaten eggs to the milk mixture and mix to blend well.

Add enough of the remaining flour to make a soft but stiff dough.

Turn the dough out onto a lightly floured surface andΒ kneadΒ for about 10 minutes, or until the dough is smooth and elastic.

Butter or oil a large bowl. Place the dough in the greased bowl. Turn it over to grease the entire surface of the dough.

Cover the bowl with a clean kitchen towel and let it stand in a warm, draft-free place until it has doubled in bulk, about 1 to 1 1/2 hours.

Punch the dough downΒ and divide it into two equal portions. Cover the dough with a kitchen towel and let it rest for 10 minutes.

Shape the dough into two loaves and place them in two greased 8-by-4-inchΒ loaf pans.

Cover the pans with a kitchen towel and let the loaves rise for about 45 to 60 minutes, or until the dough has almost doubled in bulk. Then preheat oven to 180c.

Bake in preheated oven for 25 minutes. Place foil over the loaves for the last 10 minutesΒ if they look overly brown.

Remove the loaves from the pans and let them cool on racks.

Caramel Walnut Brioche Pudding

Butter both sides of sliced Brioche and layer in greased pan (mine is 8” x 11”).

2.Β Β Β Β Β Sprinkle dried Mixed fruit and Walnuts evenly over bread.

3.Β Β Β Β Β Mix eggs, sugar and vanilla paste until sugar is dissolved,then mix together with Cream and Milk.

4.Β Β Β Β Β Pour egg mix over Brioche and let soak whilst you make your caramel.

5.Β Β Β Β Β In heavy based pan add butter, golden syrup and condensed milk, stir until all melted on low heat. This can then be spooned over Brioche into all gaps, finish by sprinkling more Walnuts and Cinnamon.

6.Β Β Β Β Β Place in oven 165’c fan forced for 35-45 minutes, or until centre is set.

# You may like to soak Mixed Fruit in a little Brandy!

Cherry Dark Choc Biscotti

Preheat oven to 180ΒΊC (160ΒΊC fan).Β Β Line a large oven tray with baking paper.

In the bowl of a stand mixer fitted with whisk attachment, combine sugar and eggs.Β Β Whisk until pale and fluffy.Β Β Add both flours, nuts, sultanas and cherries and stir to combine.Β 

Lightly dust a clean work surface with flour.Β Β Turn the dough out onto the surface, divide into two even portions then roll each into a 30cm long log.Β Β Transfer to prepared tray, flatten the tops slightly then bake for 30 mins.Β Β Remove tray from oven and allow logs to cool for 20 mins.Β Β Reduce oven temperature to 140ΒΊC.

Use a serrated knife to diagonally cut slices, about 5mm thick.Β Β Arrange slices back onto the lined oven tray and bake for a further 15 mins, turning the biscuits half way, until they are crisp and dry.Β Β Transfer biscuits to a wire baking rack to cool completely.

Place chocolate in a microwave safe bowl and melt according to packet instructions.Β Β Pour melted chocolate into a small cup and dip the ends of the biscotti into the melted chocolate, tapping off any excess.Β Β Sprinkle extra almonds over the chocolate to decorate.

Place dipped biscotti onto baking paper and stand at room temperature until the chocolate sets.

Traditional Hot Cross Buns

Place your flour, yeast, sugar, allspice, cinnamon and salt in your mixing bowl and briefly mix until combined.Β 

Add in your melted butter, warm milk, eggs and raisins.Β 

Mix with your dough hook on medium speed for 5-7 minutes until a dough ball is formed and is coming away from the sides of the bowl.Β 

Leave the dough covered with clingfilm in a warm place for approximately 1 hour or until doubles in size.Β 

Knock the air out of the dough and roll it into a log before cutting it into 12 even pieces.Β 

Roll each piece into a smooth ball and place into a grease proof paper linen baking tray (approx. 30cm x 20cm) in a 3 bun by 4 bun pattern.Β Β 

Cover balls of dough with cling film again and let rise for approximately 40 minutes or until it has risen to about 70% of its original size.Β 

Pre heat oven to 180 degrees after leaving it to rest.Β 

Right before placing it into the oven make your cross mixture by mixing your flour and water until a thickish paste forms. Using a ziplock bag with the corner cut off or a piping bag, pipe your crosses down the center of each bun horizontally and then vertically.Β 

Bake in the oven for approximately 20 minutes or until nice and golden brown.Β 

Meanwhile, place jam and water in a bowl and microwave for approx. 30 seconds until melted and combines.Β 

Once buns are fresh out the over, brush your glaze over each one to give them a beautiful glossy finish.Β

Preheat the oven to 180Β°C. Place the pumpkin halves, cut-side up, on a baking tray. Brush the cut side with 1 tbs oil. Roast for 1 1/4 hours or until just tender. Set aside to cool.Β 

Use a spoon to remove pumpkin seeds and membrane and discard. Meanwhile, arrange the walnuts & hazelnuts on a baking tray and roast for 3-5 mins or until toasted. Set aside to cool. Coarsely chopΒ 

Heat the remaining 1 tbs oil in a large frying pan over medium heat. Add the onion and cook, stirring, for 4 mins or until softened. Add the garlic and cook, stirring, for 30 secs or until aromatic. Stir in the mushrooms & lemon thyme.Β 

Place the onion mixture, breadcrumbs, egg, fetta, baby spinach, currants and nuts in a large bowl and stir to combine. Season.Β Β 

Divide mixture among pumpkin shells and press down firmly. Carefully place the pumpkin shells together and tie with kitchen string to secure. Place on a baking tray and roast for 45 mins or until heated through. Transfer to a serving platter.
