Pumpkin Macadamia Salad

Method
Preheat oven to 180ΒΊC.
- Place pumpkin and onion in large baking dish, add 2 tablespoons of oil and mix to coat. Roast or grill until tender (approx 30 minutes), turning once. Cool, and then gently mix with rocket, macadamias and raisins.
- Combine lemon juice, honey, ginger and remaining 2 tablespoons of oil in screw top jar. Shake and pour over salad. Gently toss to combine.
Ingredients
700g pumpkin (3cm pieces), chopped
1 medium red onion, sliced
4 tbsp olive oil
50g rocket leaves
70g Sunbeam Macadamia Halves, coarsely chopped, toasted
70g Sunbeam Raisins
2 tbsp lemon juice
1 tsp honey
2 tsp grated fresh ginger

Christmas Cake Friands (GF)
- Pre-heat oven to 180Β°C (160Β°C fan-forced). Lightly grease 12 x β cup capacity muffin pans.
- Place fruit and brandy in a microwave proof dish and cook on medium heat for 30 seconds. Set aside to cool.
- Sift icing sugar into a large mixing bowl and stir in the almond meal and flour.
- In a separate bowl, whisk the egg whites until frothy. Mix in the butter and add to the icing sugar mixture. Stirring until well combined.
- Pour mixture between prepared moulds and bake for 20-25 minutes. Allow to cool for 5 minutes before removing from pans and cool completely on a cooling rack.
- For icing, combine icing sugar and water mixing until smooth. Allow to sit until desired consistency is achieved. Spoon over each cake and finish with lemon rind and raspberries.
Australian Ice-cream Pudding
Preheat oven to 180oC.
Brush a 2 litre pudding basin with vegetable oil, then line with plastic wrap, trying to keep wrap smooth without wrinkles. Place in the freezer to chill. In a bowl combine Sultanas, Raisins, cranberries, apricots, Macadamias and orange liqueur. Leave to soak for 30 minutes. Place softened ice cream in a large bowl stir in soaked fruit. Fold in whipped cream and pour mixture into prepared pudding basin. Place in the freezer and freeze for 4 hours or overnight.
To prepare orange cake, cream butter and sugar until light and fluffy. Beat in eggs one at a time. Stir in Almond Meal, orange juice and rind. Pour into a greased and paper lined 20cm cake tin and bake for 1 hour. Allow too cool in the tin, before turning out onto a board.
To finish pudding, ease ice-cream pudding from basin and place on top of cake. Trim the cake edges if required and serve cut into thick slices.
Turmeric Chicken Curry

Heat oil in a frying pan. Add onion, ginger and garlic, cooking over low heat for 4-5 minutes until tender. Stir in spices and cook a further minute.

Add coconut milk, chicken and almond meal to pan. Simmer over a low heat partially covered until chicken is cooked through.

Serve curry sprinkled with flaked almonds, tomatoes and coriander. Accompany with rice and cucumber.
Baked Brie with Fruit & Nuts
Soak dried fruit in maple syrup & hot water to coat for 15β20 mins until plump and sticky. The longer the soak the plumper the fruit gets.
Score the top of the brie (light cross-hatch), place on a baking dish or lined tray. Bake at 180Β°C for 10 mins, until soft and gooey.
Top with the soaked fruit mixture and a little extra maple syrup.
Serve warm with crusty bread & crackers
Christmas Slice
Preheat oven 150Β°C (fan-forced).
- Line a loaf tin (20cm x 10cm) with baking paper.
- Combine all ingredients in a bowl and stir until well combined.
- Spoon mixture into prepared tin and bake for 40mins. Allow to cool. Dust with icing sugar and slice thinly.
Traditional Hot Cross Buns
Place your flour, yeast, sugar, allspice, cinnamon and salt in your mixing bowl and briefly mix until combined.Β
Add in your melted butter, warm milk, eggs and raisins.Β
Mix with your dough hook on medium speed for 5-7 minutes until a dough ball is formed and is coming away from the sides of the bowl.Β
Leave the dough covered with clingfilm in a warm place for approximately 1 hour or until doubles in size.Β
Knock the air out of the dough and roll it into a log before cutting it into 12 even pieces.Β
Roll each piece into a smooth ball and place into a grease proof paper linen baking tray (approx. 30cm x 20cm) in a 3 bun by 4 bun pattern.Β Β
Cover balls of dough with cling film again and let rise for approximately 40 minutes or until it has risen to about 70% of its original size.Β
Pre heat oven to 180 degrees after leaving it to rest.Β
Right before placing it into the oven make your cross mixture by mixing your flour and water until a thickish paste forms. Using a ziplock bag with the corner cut off or a piping bag, pipe your crosses down the center of each bun horizontally and then vertically.Β
Bake in the oven for approximately 20 minutes or until nice and golden brown.Β
Meanwhile, place jam and water in a bowl and microwave for approx. 30 seconds until melted and combines.Β
Once buns are fresh out the over, brush your glaze over each one to give them a beautiful glossy finish.Β
