Pavlova Trifle with soaked Natural Sultanas

Method
- To make the Rum Custard: Soak Sunbeam Sultanas in the rum for 1-2 hours. Place milk, maple syrup, vanilla, cinnamon and ginger into a saucepan over low-medium heat. Bring to a gentle simmer but below boiling for 5 minutes. Remove from the heat and allow to cool slightly, removing the cinnamon and ginger pieces.
- In a large bowl whisk together egg yolks and corn starch. Then, while whisking slowly mix in a ladle of the warm milk to temper the eggs. Continue doing this until you have mixed all the warm milk in. Clean out the saucepan and add the custard mixture back in. Heat over low heat for 20 minutes, whisking constantly, until the custard coats the back of the spoon. Remove from heat and stir through the rum-soaked Sultanas.
- Pour into a heat safe bowl and let cool on the counter. Then, refrigerate until cold.
- To make the Candied Pistachios: Add the sugar and honey to a small saucepan over medium heat. Cook, stirring, until sugar is dissolved. Add pistachios, salt and lemon zest. Stir to combine. Turn the heat up to medium-high and cook for 2 minutes, or until the syrup coats the pistachios and is very thick. Place pistachios onto a baking tray lined with baking paper and allow to cool and set. Let cool completely before chopping and using.
- Pour into a clean bowl the thickened cream. Add in the vanilla essence and whisk until soft peaks forms.
- To assemble Trifle: in a large glass serving dish, layer custard, chunks of pavlova, spiced rum custard, whipped cream, honey candied chopped pistachios, strawberries and raspberries. Repeat this until your trifle bowl is full.
- Garnish with fresh raspberries, strawberries, cream and honey candied chopped pistachios.
Serve and enjoy.
Ingredients
1 pre-made (store bought) pavlova
500g strawberries, sliced
250g raspberries
Rum Custard
Β½ cup spiced rum
3 tablespoons Sunbeam Sunmuscats
2 cup milk
β cup maple syrup
2 cinnamon sticks
2cm ginger, thinly sliced
1 tsp vanilla extract
4 large egg yolks
1 tsp cornstarch
Candied Pistachios
3 tbsp sugar
2 tbsp honey
1 cup Sunbeam Pistachio
1 tsp of lemon zest
Whipped Cream
600ml thickened cream
1 tsp vanilla essence

Gluten Free Cake
Preheat oven to 160Β°C
- Grease and line a deep 23cm round cake tin with two layers of greased baking paper extending paper 5cm above rim
- Place the mixed fruit, butter, whisky and sugar in a large saucepan and bring to the boil. Reduce heat to low and simmer for 5 minutes, stirring constantly. Remove from heat and cool until lukewarm. Add the eggs one at a time, beating well between each addition. Sift flour with the baking powder, spice and soda and stir into mixture with Sunbeam Almond Meal and stir until thoroughly combined.
- Spoon into the prepared tin and bake at 160Β°C for 1 Β½ β 2 hours or until a skewer inserted in the centre of the cake comes out clean. Cool cake in tin for 30 minutes before transferring to a wire rack and cool before removing paper.
Sunbeam Christmas Pudding
In a large saucepan combine all dried fruits with 300ml water, butter and caster sugar.Β Β Stir well to combine, then bring to the boil, reduce heat to low and stir over a simmer for 8 mins.Β Β Turn off the heat and stir in bicarbonate of soda.Β Β Cover and allow mixture to cool completely overnight.
Soak breadcrumbs in milk until just absorbed.Β Β Add to the mixture with lemon zest, almonds, carrot, flour and spices.Β Β Mix well then stir in eggs, brandy and orange juice.Β
Grease the base and sides of a 2L lidded pudding basin.Β Β Spoon the mixture into the basin then smooth the surface and cover with a round of baking paper before closing the lid.
Place a trivet into the bottom of a large saucepan and rest the pudding basin on top.Β Β Fill the saucepan with enough boiling water to come half way up the basin.Β Β Cover the saucepan with lid, bring the water to a boil then reduce to very low simmer and leave the pudding to steam for 6 hours.Β
Check that the pudding is done by gently pressing gently the centre.Β Β If it springs back itβs ready (f not, re-cover and steam for a further 30 mins, repeating if necessary).
Allow pudding to cool in the tin for an hour then invert onto a baking rack to cool completely.
Candied Walnut & Beetroot Salad
- In a pan on medium heat combine Sunbeam walnuts, butter and honey until candied, set aside to cool.
- Preheat oven to 220c and cut the beetroot into quarters. Cover beetroot in olive oil, season with salt and bake for 30 mins.
- Remove skin of orange and slice into segments, crumble goats cheese.
- Once beetroot is cool combine salad ingredients with candied walnuts, dress with olive oil.
Date Cookies
- Pre-heat oven to 170Β°C (150Β°C fan-forced). Line oven trays with baking paper. Place oats, flour, dates and pepitas in the bowl of a food processor and pulse until coarsely chopped. Remove to a mixing bowl.
- Place butter and honey in a small saucepan and heat until melted. Add to oat mixture with the banana and mix well. Spoon tablespoons of mixture onto prepared trays. Bake for 20 minutes or until just golden. Remove to a cooling rack to cool completely.
Panforte

Pre-heat oven to 180Β°C (160Β°C fan-forced). Line the base and sides of a 20cm round cake pan.
Place sugar, honey and chocolate in a large saucepan and gently heat until chocolate is melted. Stir in the raisins, figs, cherries, cranberries and nuts. Mix well.
Add flour, cocoa and spices to mixture and working quickly mix it together until all combined. You may need to wear a thick rubber glove. Press mixture into prepared pan and bake for 13-15 minutes. Set aside to cool before removing from pan to cool completely.
Spiced Lamb in Lettuce Cups
- Heat oil in a large frying pan. Add onion and garlic, cooking for several minutes until tender. Add spices, cooking a further minute. Increase heat and add lamb mince, cooking until well browned.
- Add dates, pomegranate molasses, herbs and pinenuts. Mix well and season to taste.
- Spoon mixture between prepared lettuce cups. Drizzle with yoghurt and lemon juice, finishing with additional mint leaves.
