Nut Crusted Cheese Log

Method
Let the cheeses soften on your bench while you dice nuts and herbs. Whip the cheeses with liquor to combine until smooth.
Mix chilli with herbs and nuts, then sprinkle onto a 30cm piece of plastic wrap, leaving a 2cm border.
Spoon cheese along one end of herbs. Lift wrap and roll cheese away from you into a log, pressing gently to coat well in herbs, shape the mixture into a log, then wrap and refrigerate for about an hour, until the mixture is firm. (NOTE: Can be made up to 2 days ahead of time)
Serve with your favourite crackers.
Ingredients
250 g cream cheese
150g Castello Double Cream Brie
2 tablespoons port, brandy or sherry
2 teaspoon dried chilli flakes
1/2 cup finely chopped mixed soft herbs (such as parsley, chives and basil)
1/3 cup finely chopped SUNBEAM pistachios, diced
1/3 cup SUNBEAM macadamia, diced

Fruit Cake Trifle
- Pre-heat oven to 180Β°C (160Β°C fan-forced). Line the base and sides of a 20cm round cake tin. Place mixed fruit and juice in a saucepan and gently heat through. Set aside to cool.
- Combine butter and sugar in the bowl of an electric mixer and beat until creamy and pale. Add eggs one at a time until well combined. Add flour, almond meal, cinnamon and baking powder. Continue mixing until batter is smooth. Stir in fruit mixture until well combined. Pour into prepared tin and smooth the surface. Sprinkle with slivered almonds and bake for 35-40 minutes until golden and an inserted skewer comes out clean. Allow to cool completely.
- For assembly, whip the cream and sugar to firm peaks. Set aside ΒΌ of the cream for decoration. Stir the custard into remaining cream until well combined. Slice cake horizontally into 3 even discs. You may need to trim the edges slightly to fit your serving bowl.
- Press one round of cake into the base of a 20cm serving bowl. Sprinkle with 1 tablespoon of the brandy. Press half of the strawberries around the edge of the bowl and cover with half of the custard mixture. Place a second round of cake on top of custard and sprinkle with another tablespoon of brandy. Repeat process with strawberries and remaining custard. Finish with final round of cake and remaining brandy. Cover and allow to sit for at least 4 hours or overnight. For serving, top with the cream that was set aside and decorate with additional strawberries and cherries.
Burnt Honey and Macadamia Semifreddo
- Line a 2L freezer-safe container with baking paper.
- In a small saucepan melt butter. Add honey and cook for a further 2 mins until foamy and golden. Remove from heat and allow to cool slightly.
- Combine all eggs, vanilla, sugar and salt in a heatproof bowl.Β Bring a saucepan of water to a simmer,Β place bowl over the top and constantly beat for 6-8 mins (using an electric beater) or until the mixture is thick and pale. Remove from heat, beat in the burnt honey mixture then allow to cool for 5 mins.
- Beat thickened cream to stiff peaks. Gently fold the burnt honey custard, fruit and macadamias through the whipped cream, then spoon into the prepared container and freezer overnight.
- Serve generous scoops in waffle cones.
Carrot & Walnut Cake Cupcakes
Preheat oven to 180 degrees CelsiusΒ
Whisk together your plain flour, baking soda, salt and cinnamonΒ
In a separate bowl, mix your wet ingredients, milk, white vinegar, vegetable oil, eggs and brown sugarΒ
Once your wet ingredients are well combined, stir in your carrots, shredded coconut, pineapple, walnuts and raisins.Β
Pour your wet ingredients into your dry ingredients and mix until just combined. Do not over mix.Β
Fill your muffin tins with your patty pans and then with a spoon or a lever ice cream scoop, fill them to the top.Β
Bake in the oven for approximately 20 minutes or until a skewer comes out clean.Β Β
Let cool completely before decorating with meringue.Β
Once your muffins are cool you can start on your meringue. Mix your egg whites and caster sugar together in a bowl over a pot of water on the stove. Once the heat from the pot has dissolved the sugar in your egg whites, put your bowl on your electric mixer and whisk until stiff peaks.Β
Using a piping bag or a large ziplock bag with the corner cut off, pipe the top of your muffins in any shape you like. If you have a blow torch, give them some colour, or leave them natural and decorate with your favourite easter eggs.Β Β
Sultana & Cornflake Cookies
Preheat oven to 180Β°C. Beat butter and sugar in small bowl with electric mixer until smooth, add egg, beat until combined. Stir in sultanas and sifted flour.Β Fold flour, 1 cup cornflakes, sultanas through mixture. Roll rounded teaspoons of mixture in lightly crushed cornflakes, place about 3cm apart on greased oven trays; flatten slightly. Bake in oven about 20 minutes or until browned. Cool on trays.
Easter Butter Board
- Whisk your room temp butter until light a fluffy, this takes approx 5 min
- Spread your whipped butter generously on a board or serving platter. Go rustic!
- Top with diced pan fried pieces of pancetta, Angas Park figs, fresh figs, Sunbeam chopped nuts and sultanas.
- Drizzle with honey and finish with sprigs of rosemary.
- Serve with crusty bread, crackers, or warm hot cross buns for an Easter twist π°
