Simnel Cake

Serves 1 cake | 13 slices
Method
Preheat the oven to 180degress.
Butter the walls of your Bundt tin well.
Chop your glace cherries into quarters and mix into your mixed fruit.
Cream the butter and sugar until light and fluffy and add the lemon zest.
Mix the flour, baking powder, cinnamon, ginger and ground almonds into a bowl and stir to combine.
Into the whipped butter and sugar mix, add 1 of the eggs with a quarter of the dry ingredients.
Add in the other 2 eggs in the same way, followed by the rest of the dry mix remaining.
Mix in the mix, then the fold in the fruit.
Spoon the mixture evenly around the Bundt tin and smooth out the mix.
Bake on 180degrees for 30 minutes and then turn down the oven to 150 degrees for 1.5 hours or until the cake has risen and a skewer comes out clean.
Let the cake rest for 15 minutes before turning it out to cool further.
For the icing, mix the icing sugar, milk and orange juice together and pour over and enjoy!

100 grams Sunbeam glace cherries
500 grams Sunbeam mixed dried fruit
175 grams soft unsalted butter
175 grams caster sugar
zest of 1 lemon
225 grams plain flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
25 grams Sunbeam almond meal
3 extra large eggs
2 tablespoons milk
100gm icing sugar
10ml of milk
Squeeze of orange juice

Gingerbread Granola
Preheat the oven to 180β.Β Β
In a large bowl, add all of the ingredients and mix well with a wooden spoon until all well combined.Β Β
Spread the mixture across 2 large baking trays lined with baking paper. Place into the oven and bake for 20-25 minutes, tossing the granola after 10 minutes.Β Β
Remove from the oven and allow granola to cool completely before storing in airtight containers, or jars.Β Β

Orange & Olive Oil Almond Cakes (Gluten Free)
- Pre-heat oven to 180Β°C (160Β°C fan-forced). Line 12 x β cup capacity muffin moulds with paper cases.
- Combine flour, almond meal, sugar and baking powder in a large mixing bowl.
- In a separate bowl, whisk together the oil, milk, eggs and orange rind until well combined. Add to flour mixture and mix until smooth. Pour between paper cases and sprinkle with flaked almonds. Bake for 20 minutes.Tip:
For those avoiding dairy, simply substitute the cows milk with your milk of choice.
Mini White Choc Puddings
- Sift flours, mix in breadcrumbs, cranberries, currants, pistachios, chocolate and rind.
- Cream butter and caster sugar until light and fluffy, pour in condensed milk and vanilla beating continuously. Beat in eggs one at a time beating well after each addition.
- Make a well in the centre of the breadcrumb mixture and pour in butter mixture, mixing well to combine.
- Prepare 8 mini pudding basins (200ml capacity): Cut 8 baking paper circles fitting the top, 8 circles fitting the bottom of the pudding basins and 8 circles 6cm larger than the basins. Grease well and insert a paper circle into the bottom of each basin.
- Spoon mixture into prepared ΒΎ cup basins, smooth and top with a paper round. Take the 6cm round and fold a 1cm pleat in the centre. Tightly secure with kitchen string approximately 1 β 2cm below the pudding top.
- Place a wire rack onto the base of a large saucepan and arrange puddings on top. Add enough boiling water to fill halfway up pudding basins. Cover and steam for 1 hour, replenish water when needed. Remove from water, stand for 10 minutes before carefully turning out. Serve with caramel brandy sauce.
Caramel brandy sauce
- Place sweetened condensed milk, brown sugar, golden syrup and butter in a medium saucepan, cook, stirring occasionally for 5 minutes or until mixture begins to change to a caramelise. Remove from heat and leave to cool for 10 minutes. Pour in brandy and cream, mix well.
Tip: These puddings can also be steamed in the microwave. Ensure your moulds are microwave safe, cook in microwave on defrost setting for 20 minutes, check if a skewer inserted into pudding comes out clean. If not cooked, microwave at 5 minute intervals, until skewer comes out clean. Stand for 10 minutes before turning out.
Pumpkin Fruit Cake
Preheat oven to 160β°C. Grease and line a 20cm round cake tin.
- Bring to the boil mixed fruit, sugar, syrup, butter and apricot nectar, stirring all the time and simmer gently for 10 minutes. Remove from heat and add bicarbonate of soda. Allow mixture to cool.
- Add eggs and pumpkin. Beat till smooth. Then add flours and mix well to combine.
- Place in tin and bake for 90 minutes, or until a skewer inserted into theΒ cake comes out clean.
Bread and Butter Pudding
Pre-heat oven to 180Β°C (160Β°C fan-forced).

Combine sultanas and juice in a small bowl and set aside.

In a large bowl, whisk together the eggs, cream, milk, sugar and vanilla.

Sprinkle some of the sultanas and chocolate over the base of a rectangular baking dish. Arrange half of croissants in the baking dish, slightly overlapping. Sprinkle with more of the sultanas and chocolate. Top with remaining croissants, sultanas and chocolate.

Pour egg mixture over croissants allowing time for it to be absorbed, approximately 30 minutes. Sprinkle with almonds.Β

Bake pudding for 35-40 minutes or until set. Serve warm with cream or ice-cream.
Traditional Hot Cross Buns
Place your flour, yeast, sugar, allspice, cinnamon and salt in your mixing bowl and briefly mix until combined.Β
Add in your melted butter, warm milk, eggs and raisins.Β
Mix with your dough hook on medium speed for 5-7 minutes until a dough ball is formed and is coming away from the sides of the bowl.Β
Leave the dough covered with clingfilm in a warm place for approximately 1 hour or until doubles in size.Β
Knock the air out of the dough and roll it into a log before cutting it into 12 even pieces.Β
Roll each piece into a smooth ball and place into a grease proof paper linen baking tray (approx. 30cm x 20cm) in a 3 bun by 4 bun pattern.Β Β
Cover balls of dough with cling film again and let rise for approximately 40 minutes or until it has risen to about 70% of its original size.Β
Pre heat oven to 180 degrees after leaving it to rest.Β
Right before placing it into the oven make your cross mixture by mixing your flour and water until a thickish paste forms. Using a ziplock bag with the corner cut off or a piping bag, pipe your crosses down the center of each bun horizontally and then vertically.Β
Bake in the oven for approximately 20 minutes or until nice and golden brown.Β
Meanwhile, place jam and water in a bowl and microwave for approx. 30 seconds until melted and combines.Β
Once buns are fresh out the over, brush your glaze over each one to give them a beautiful glossy finish.Β
